Chuck Wagon Burgers

2 lbs ground beef
1 envelope onion soup mix
1/2 c water
1 tube large refridgerated biscuits
1/8 tsp seasoned salt (you don't really need this, it's salty enough)

Combine beef & soup mix & water; mix. Shape into eight 3/4 inch thick patties. Grill until done. Meanwhile cook biscuits (I flattened them a little first) Split; top each biscuit with a hamburger. I added cheese, lettuce, tomato & onion. Oh and of course mayo, ketchup and mustard!

Serve with Limon lays potato chips.

Mexicali Pork Chops

This was like the EASIEST thing ever. I know I say that every time, but this one really was.

1 envelope taco seasoning
4 boneless pork chops
1 tbsp veg oil

Rub taco seasoning over pork chops. Cook chops in oil until no longer pink. Uh, yeah that's it!

Serve with some kind of veggie & you've got dinnah!

Turkey and Stuffing Pie

This tastes like a yummy Thanksgiving casserole!

SOOOOOO easy, too! see a pattern here?

3 cups prepared stuffing.
2 cups cubed cooked turkey
1 cup shredded swiss cheese
3 eggs
1/2 cup milk.

Press stuffing onto bottom of greased pie plate. Top with turkey and cheese. Beat eggs and milk; pour over cheese. Bake at 350 for 35 minutes.

Bacon Cheeseburger Pasta

8 oz. uncooked tube or spiral pasta
1 lb hamburger
6 bacon strips, diced
1 can tomato soup
1 cup shredded cheddar cheese
BBQ sauce, optional

Cook pasta according to pckg directions. Meanwhile , cook hamburger. drain. Cook bacon (I baked it in the oven & put pepper on it. much better that way!) Drain pasta, add to hamburger & bacon. Add soup. Heat. Sprinkle with cheese and cook till the cheese melts.

This is so simple, and the husband loved it!

Honey Lime Grilled Chicken

Now here's a WAY EASY marinade. It's SOOOOO good , too.
1/2 c honey
1/3 c soy sauce
1/4 c (or more, if you want!) Lime juice
4 boneless skinless chicken breasts halves
in a resealable plastic bag, combine all and mix well. Add chicken and turn to coat. Seal or cover for 30-45 min.
Drain and discard marinade. (I didn't do this. I poured it over our chicken when it was done. JK!! No, I did not try to kill my family that night. I poured it in WHILE IT WAS COOKING)
It's kind of an asian flavor. So, you could do some asians sides if you're real good. Mandarin oranges? Hmmm. I don't know. I'm not good that way.
But the chicken is DELISH!

I love this recipe. It's soooo easy! Andrew taught me this one.
you need:
1 package fritos chips
1 can of chili (warmed up, I use two for left overs!)
lettuce (chopped, as much as you want)
tomatoes (diced, as much as you want)
cheese (grated, as much as you want)
sliced olives (I use 2 cans)
sour cream (or salad dressing)
Now just stack it all up on eachother (chips on bottom)
& THAT'S IT!!

Sesame Ginger Chicken

Now, here's for a more sophisticated meal. (Even my Mom would like this!)

Once again, SO EASY! & found in the lovely 5 ingredient book! Except they lied, there are 6 ingredients!

We are big chicken fans at our house. Well I am. I am always interested in new (& EASY) ways to cook chicken. This one's a keeper.

AND I happened to already have all of this stuff

Sesame Ginger Chicken:

2 TBSP soy sauce (I didn't have this, so I used Teryaki! Still good!)
2 TBSP honey
1 TBSP toasted sesame seeds (I didn't toast em. WAAAY too much work!)
1/2 tsp ground ginger
4 boneless skinless chicken breast halves ( I used only 3 cause that's all i had)
2 green onions with tops cut into thin strips (optional) I didn't do this either! Woulda been good though!

We made stir-fry veggies with this and seasoned them in the same stuff! DELISH!!

Of course Jax didn't approve, but he rarely does. This was fantastic!

Now, try it!

Peppy Macaroni

Now, if you aren't a macaroni and cheese fan, don't even try this.

But if you are a fan, and you dare get a little funky with it, try it.

I quite liked it. And so did Andy. AND so did JAXON!! No way!

Peppy Macaroni:

1 package macaroni and cheese dinner
2 eggs, lightly beaten
1 jar (8 oz) pizza sauce
40 slices pepperoni
2 cups shredded mozzarella cheese.


First, Make the macaroni and cheese just like the box tells you to.
Then, fold in eggs.
Spread into greased baking dish.
Top with Pizza sauce, pepperoni , and mozzarella.
Bake, uncovered at 350 for 30-35 minutes. (I didn't bake it for that long. Maybe like 25 minutes)

THAT'S IT! Hooray for 5 ingredients! Hooray for this cookbook, it gives me hope.

My mom would be totally disgusted that I made this. I know she would. But she hates macaroni and cheese. This is the most basic, kid meal almost ever. But hey, I don't care! I cooked!

Chili Casserole

Hey! I know it's been awhile, but I am still here!

I've got another 5 ingredient beauty!

Chili Casserole:

I doubled this recipe. 1 can of chili is NOT that much. So here is my doubled recipe:

2 cans chili
2 cans chopped green chilies
2 cans sliced olives
4 cups grated cheddar cheese
4 cups ranch doritos, crushed

This was so easy!
First, combine ALL ingredients in a bowl
Second, transfer to a greased baking dish
Third, bake at 350 for 30-35 min.
VOILA!

EASY, EASY, EASY.

I added stuff to it when I took it out. Like, shredded lettuce, sour cream and tomatoes! This was so yummy!

Definitely making it again.

Bubble Pizza

I know this sounds weird. The picture in my head was also a strange one too when I first heard the name. It's really not too weird. It's more of a casserole type thing. I didn't take a picture of it- Gosh darnit! How is it that I am SO BAD at this picture stuff when it comes to documenting my food?
Anyway. This was pretty good. Worth making , I think. And dang, dang easy. (easy by my standards, of course)
Here are the ingredients:
1 1/2 lbs ground beef
2 (12 oz) tubes of refrigerated buttermilk biscuits
1 can (15 oz) pizza sauce (You really probably should add more though)
1 1/2 c. Mozzarella cheese
1 c. cheddar cheese
THAT'S ALL! (Yeah, another one of those 5 ingredient wonders!)
Directions:
So, cook the hamburger. Season it with onion powder if you want. After it is cooked, add the pizza sauce to it.
Then, grease a 9x13 casserole dish. It says to "quarter" the biscuits and put them in the bottom of the dish. All you need to do is just pull them apart. I lasted about 4 biscuits trying to cut them into 4 even pieces each. Not the worth the hassle. Just pull em apart. Just lay em at the bottom of the dish.
Put the hamburger mixture on top of the biscuits in the dish.
With me so far? Pretty complex stuff, I know.
Now, bake it at 400 for 20 ish minutes. You might wanna do 18 minutes. Mine were a little too done on the bottoms. Unless of course you like it like that.
When you take it out, dump the cheese all over it. Then bake it for another 5-10 min.
THEN ....VOILA!
That's it. You've got dinner. Wham, bam, thank you mam.
You could add extra toppings if you want. Like tomatoes, mushrooms (yuck!), olives...etc.
I actually forgot to do this.
I served green beans on the side, and it was delightful. Not exactly gourmet or anything, but hey , what'd ya expect?!
Jaxon ate it because we fooled him from the beginning by calling it "pizza". He loves pizza. Apparently he believed us because he kept repeating the word over and over, preceded by "nother one"
Big hit with him. Yipee for that.
Try this. You might like it! And it sure CAN'T get easier than this!

Biscuit Tostadas

(These kind of look like navajo tacos)

Once again, 6:00 rolls around, and oh, it's dinner time! Yipee!

Except this time, I had a plan. I had already planned to make these Biscuit Tostadas that I found in the same 5 ingredient cookbook that the BBQ Chicken Pizza was in. Great, great book.

Here are the indgredients:

1 lb ground beef
1 jar (16oz) salsa, divided
1 tube large refrigerated biscuits
2 c. shredded colb-jack monterey cheese
2 c. shredded lettuce

First, cook the hamburger. I ALWAYS season my hamburger with onion powder. (Maybe I did after all learn something about cooking from my Mom.)

Add 1 1/2 c. salsa to the hamburger. I added until it looked right. Who know how much it really was. You'll know.

Then you get out your biscuits, flatten them out and put them on an un-greased pan. (Once again, lovin my stoneware from pampered chef. If you don't have one of these, you really should invest in one.)

Bake at 350 for about 14 minutes give or take. (Until golden brown)

Top with meat mixture, cheese, lettuce, and remaining salsa. I also added some stuff of my own: olives, tomatoes, sour cream.

These were YUMMY and way easy. I didn't even mess up once!

Barbecue Chicken Pizza

Sounds hard. But it isn't. Obviously.

My awesome sis-in-law let me borrow this "5 ingredient cookbook", and my life hasn't been the same since.

I made this awesome pizza last night. It was a hit here in the Talbot home (Even with a very picky toddler).

Ingredients:

1 prebaked Italian bread shell crust (14 0z) Now, if you actually happen to find this stuff, or someone who actually knows what it is, power to you! I didn't. But that didn't stop me.
If you can't find this stuff, don't panic. Go get some of that frozen pizza dough. It was like $2. Thaw it and roll it out onto a greased pan. I put Italian seasoning in the dough. (Note: Don't thaw it for too long, because it will start to cook. Then it gets really hard to spread. But if this does happen, you can still do it anyway. I tested that one.)

2/3 cup Honey garlic bbq sauce. (Once again, if you can't find this, don't cry like I almost did. Just get Honey bbq and go home and add garlic salt in it) . I used maybe more sauce than that. I hate when things are dry.

1 small red onion, chopped. I used maybe half of it though. Don't wear make up if you're gonna do this. It might be smart to wear goggles or something, because this part was just flat out miserable. My eyes were crying for like 15 minutes. I couldn't even see anything. That's probably how a lot of kitchen accidents happen. Holding a sharp knife and crying very very hard can't be safe. Do they make kitchen goggles?

1 cup cubed cooked chicken. I made more. And seasoned it with Italian and pepper.

2 cups shredded mozzarella cheese. I used the orange kind. But it would have been better with mozzarella.

So basically, you just spread the sauce, and just add the toppings to your liking. I cooked it for 20 minutes. When I took it out of the oven , I added fresh tomatoes on top.

This was delicious. Really. I was worried big time because of the dough thing. But somehow everything worked out. And really, I wanna say it was my pan that saved my butt. I have the pampered chef stone ware. It's amazing. It cooks evenly, and things don't burn as easily on it. I recommend it!

My Chicken Parmesan

Ok, I lied. I do know ONE recipe. It's a very good one too. But you've gotta make it a few times and find your own style with it. When I got it straight out of the cook-book (52 weeks of recipes for students, missionaries, and nervous cooks), it ended up really dry. You don't want that.

Here is my version:

There are 5 ingredients:

*angel hair (the whole box) (A LOT better with angel hair, NOT spaghetti)
*1/2 cup grated parmesan cheese (or more if you want)
*2 cups grated mozzarella cheese
*4 large boneless, skinless chicken breasts.
*1 and a half jar spaghetti sauce.

Set the oven to 400.

What I do first is cut the chicken into smaller parts. Not cubed, not that small, but smaller. Like maybe into thirds. (I do this so it won't be SO dry) Then I cook it. I like to add lots of Italian seasoning and pepper.

If I am lucky, I am boiling the water and cooking the noodles at the same time. If you get so busy with the chicken and forget, no worries, the chicken can wait while you do this.

Then I pour half of the noodles and half of the chicken in a big casserole dish. You might wanna spray it first with pam. I put A LOT of spaghetti sauce in there and mix it all up. I put like a cup of mozz cheese and some of the parmesan on top of it and mix that all around too.

Then I put the other half of all the indredients on top of it. It basically looks like a big mess of stuff. If it looks like that, good. You want it pretty saucy, so it won't be dry. Finish putting all the cheese on top. If it looks like you need more cheese, do it. The cheesier , the better.

Then put it in the oven until the cheese melts. Maybe 10 ish minutes.

It's way yummy to serve with caesar salad.

There, that is the ONLY recipe I know. But it's good. And I'm kinda good at it! Weird.
