My Chicken Parmesan

Ok, I lied. I do know ONE recipe. It's a very good one too. But you've gotta make it a few times and find your own style with it. When I got it straight out of the cook-book (52 weeks of recipes for students, missionaries, and nervous cooks), it ended up really dry. You don't want that.

Here is my version:

There are 5 ingredients:

*angel hair (the whole box) (A LOT better with angel hair, NOT spaghetti)
*1/2 cup grated parmesan cheese (or more if you want)
*2 cups grated mozzarella cheese
*4 large boneless, skinless chicken breasts.
*1 and a half jar spaghetti sauce.

Set the oven to 400.

What I do first is cut the chicken into smaller parts. Not cubed, not that small, but smaller. Like maybe into thirds. (I do this so it won't be SO dry) Then I cook it. I like to add lots of Italian seasoning and pepper.

If I am lucky, I am boiling the water and cooking the noodles at the same time. If you get so busy with the chicken and forget, no worries, the chicken can wait while you do this.

Then I pour half of the noodles and half of the chicken in a big casserole dish. You might wanna spray it first with pam. I put A LOT of spaghetti sauce in there and mix it all up. I put like a cup of mozz cheese and some of the parmesan on top of it and mix that all around too.

Then I put the other half of all the indredients on top of it. It basically looks like a big mess of stuff. If it looks like that, good. You want it pretty saucy, so it won't be dry. Finish putting all the cheese on top. If it looks like you need more cheese, do it. The cheesier , the better.

Then put it in the oven until the cheese melts. Maybe 10 ish minutes.

It's way yummy to serve with caesar salad.

There, that is the ONLY recipe I know. But it's good. And I'm kinda good at it! Weird.
